Roasted Carrots

I am always looking for yummy vegetable sides for dinner that are EASY! :)
These roasted carrots fit the bill! 
 Wash your carrots well and then there is no need to peel! I hate peeling anything!

Cut off the top of the carrots. 

 Cu the carrots in thin slices. I cut mine in fourths because they were pretty thin carrots to begin with. 

 Spread in an even layer on a sheet pan and rub down with olive oil, salt and pepper. 

 I actually had some thyme in a pot on the deck that lived through winter so I threw some on for added flavor. 

Roast at 400 degrees for 30-35 minutes! 
All 3 kiddos ate their veggies that night!
