French Toast Breakfast Muffins

I made these for breakfast last week and they were a hit! We eat alot of muffins in our home, but these were a favorite... probably because they are a mix of breakfast and dessert... :)

Ingredients:
1/3 cup melted butter
1/2 cup sugar
1 room temp. egg
1 1/2 cup all purpose sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 cup milk

Toppings:
1/2 cup sugar
1 tsp. sugar
1/2 cup melted butter



Preheat oven to 350 degrees. 

Sift the dry ingredients. Mix the wet ingredients and add to the dry. 
DO NOT OVERBEAT.
Just trust me. 
If you want to make regular size muffins, bake 20-25 minutes.
If you want mini-muffins(like I did), bake 15-18 minutes. 
Don't over bake - Just until the muffins are beginning to turn golden.

After the muffins cool, dip in melted butter and roll in the sugar mixture. 



P.S. Feel free to take a bite and re-dip in the melted butter and sugar mixture. Then repeat. I'm not speaking from experience or anything... Lets just say there was no butter or sugar left over. :)
